The filling is Arroz con Leche. I left out the cinnamon and replaced it with 3 cups of freshly squeezed orange juice.

1/2 cup sushi rice, sticky rice Cal Rose
2 cups water.
Dash salt
3 tbsp sugar
2 tsp vanilla
Cook on low to continue adding water then one cup orange juice. This will help cool rice to temper. Add 4 egg yolks and keep whisking till custard like consistency.
Fill precooked pie crust Chill.
MERENGUE...
4 Egg whites and whip slowly adding
3 heaping teaspoons powdered sugar. Once it forms peaks you can top a CHILLED pie.
Bake in oven at 450 for 4-5 minutes, until meringue is browned. Serve Chilled.
